So I had this brilliant (seriously! where do these crazy ideas come from?!) idea to can my own chicken. I loved buying canned chicken at Costco, but didn't want to do that anymore. I wanted my own on the shelf. I just didn't know the first thing about how to do it. So I researched lots, watched lots of youtube videos (so cool btw) and got brave enough to use a pressure canner for the first time in my life. Oh, and had to grab a friend to do the project with me. Breanna said okay. Still don't know if I pressured her into it, but she was nice enough to try it with me. We had two pressure canners going so it would get done faster. What I learned: IT IS SUPER EASY! It just takes time to bring it up to pressure and then cook, then cool down and release pressure. It is super yummy too! When it was done, there was lots of liquid in the jar, but the only thing we put in the jar was chicken and 1 tsp of salt (Breanna opted for 1 bullion cube instead of the salt, I like her flavored a lot better). How easy peasy is that. This is probably the most proud I have been of anything canned before. So easy. I will be doing this again for sure. Thanks Grandma Joan for letting me borrow your canner.

of course you didn't pressure me into it!! I would think you would know after this summer that I have an insane addiction to canning. Seriously, I think I need help. :)
Tara! You did it! You have been talking about doing this forever! I'm glad you finally tried it! I really want to give it a shot but I am a little nervous. You will have to share all your tips with me! Also, I tried calling you the other day to wish you a Happy Birthday (a day late) but didn't get through. I left you a message. Hope your day was great.
